  1. Preheat the oven at 170 °C
  2. In a large bowl cream softened butter and icing sugar
  3. Mix in egg yolk until combined
  4. Dissolve instant coffee with the hot water and add to mixture
  5. Combine dry ingredients and sift into batter gradually
  6. Gently stir until mixture forms soft dough
  7. Scoop out a generous tsp of dough and shape into an oval
  8. Arrange onto tray lined with baking paper
  9. Press a middle line on each dough using the back of a knife
  10. Refrigerate for 30 mins
  11. Bake for 12-14 minutes
  12. Place biscuits on cooling rack and serve with your favourite Griffiths Bros. Coffee
